A pork loin is cut from the area between the shoulder and back legs. It is the leanest and most tender part of the pig. The cuts from this area include rib chops, loin chops, the tenderloin, and the pork loin roast. Because these cuts are lean, they can dry out if overcooked.

For the air fryer recipes here we will be using a boneless pork loin roast. When choosing a loin roast for your air fryer, be mindful of the size of the interior of your fryer. Mine can handle about a 2 pound roast. It is not a bad idea to measure the basket or plate before heading out to the market. You can ask the butcher to cut a roast to fit your fryer. A 2 pound roast will easily feed 4 people.

A 2 pound boneless loin roast will generally cook at 360°F for 50 minutes. So, count on approximately 25 minutes per pound. Using a digital meat thermometer, you will want to check the internal temperature of the meat. You are looking for 145 to 150°F. Remember to rest the roast before slicing it so that the juices don’t run out of the meat.

4. Place the roast in the air fryer basket or on the rack, fat side up. Set the timer for 60 minutes. Cook for 45 minutes and check the internal temperature with a digital meat thermometer. You are looking for 145 to 150°F. Continue cooking, checking every 5 to 10 minutes, until the desired temperature is achieved.

5. Remove the roast to a clean cutting board and tent with foil. Allow the meat to rest for at least 10 minutes before slicing.

Celery Root Puree

Ingredients:

  • 5 TBS unsalted butter (1 TBS reserved)
  • 1 onion, finely diced
  • 2 pound celery root
  • 1 medium Yukon gold potato, peeled and diced
  • 1/2 cup water
  • 1/3 cup heavy cream
  • Sea salt and freshly ground pepper to taste
  • 2 TBS grated parmesan cheese

Total time: 45 minPrep time: 15 min – Cook time: 30 min – Serves: 4 people

Directions:

1. In a large saucepan on medium-low heat, melt 4 tablespoons of the butter. Add the onion and lower the heat. Cover the pot and simmer the onions until tender, approximately 5 minutes.

2. While the onions are cooking, peel the celery root and chop it roughly, Place the celery root pieces in a food processor and pulse until uniformly grated.

3. Add the grated celery root and the potato to the sauce pan and stir. Pour in the 1/2 cup of water. Cover and simmer until the celery root and potato are fork tender, approximately 23 minutes. Rinse out the food processor bowl.

5. Transfer the celery root puree to a shallow serving bowl and season to taste with salt and pepper. Mix to combine. Sprinkle the parmesan all over the top. Serve with air fryer roasted pork loin slices.
